Es war k\u00f6st\u00adlich. Beson\u00adders die mit\u00adge\u00adkoch\u00adten Kar\u00adtof\u00adfeln. Unge\u00addul\u00addig wie ich nun 'mal beim Kochen bin habe ich die Tem\u00adpe\u00adra\u00adtur auf 100\u00b0C erh\u00f6ht und nur 1,5 h geschmort. Es hat aber trotz\u00addem geklappt!<\/p>\n<p>Weil das Rezept nicht mehr ver\u00adf\u00fcg\u00adbar ist, hier noch\u00admals zum nach\u00adko\u00adchen - ich kann es nur w\u00e4rm\u00adstens empfehlen&nbsp;....<\/p>\n<p><i><b>Lamm\u00adkeu\u00adle Adria\u00adtic- geschmort, <\/b>\u00e0 la <a href=\"http:\/\/www.snafu.twoday.net\/\" target=\"_blank\" rel=\"noopener noreferrer\">The\u00adSour\u00adce<\/a><\/i><\/p>\n<p>6 Knob\u00adlauch\u00adze\u00adhen,<br>\n1 Lamm\u00adkeu\u00adle (ca. 2&nbsp;kg),<br>\n<sup class=\"numerator\">1<\/sup>\u2044<sub class=\"denominator\">2<\/sub>&nbsp;<span class=\"caps\">TL<\/span> Meersalz,<br>\nfrisch gemah\u00adle\u00adner Pfeffer,<br>\n2 Zitronen,<br>\n6-8 <span class=\"caps\">EL<\/span> Oliven\u00f6l,<br>\n<sup class=\"numerator\">1<\/sup>\u2044<sub class=\"denominator\">2<\/sub> l Gem\u00fc\u00adse- oder Gefl\u00fcgelfond<br>\n1&nbsp;kg Kartoffeln,<br>\n2&nbsp;Eier,<br>\n1 <span class=\"caps\">EL<\/span> Speisest\u00e4rke,<br>\n1-2 Zwei\u00adge fri\u00adscher Rosmarin<br>\n1-2 Zwei\u00adge fri\u00adscher Basilikum<br>\n1-2 Zwei\u00adge fri\u00adsche Minze<\/p>\n<p>Knob\u00adlauch abzie\u00adhen und 3 Zehen zer\u00addr\u00fccken. Die Lamm\u00adkeu\u00adle absp\u00fc\u00adlen, trocken tup\u00adfen und die gro\u00adben Seh\u00adnen und H\u00e4u\u00adte abschnei\u00adden. Mit einem spit\u00adzen Mes\u00adser fla\u00adche Ein\u00adschnit\u00adte in das Fleisch schnei\u00adden und die rest\u00adli\u00adchen hal\u00adbier\u00adten Knob\u00adlauch\u00adze\u00adhen hin\u00adein\u00adstecken (\"spicken\"). Zer\u00addr\u00fcck\u00adten Knob\u00adlauch, Meer\u00adsalz und Pfef\u00adfer ver\u00admi\u00adschen und die Lamm\u00adkeu\u00adle damit rund\u00adher\u00adum ein\u00adrei\u00adben. 1 Zitro\u00adne aus\u00adpres\u00adsen und die Lamm\u00adkeu\u00adle mit dem Saft betr\u00e4ufeln.<\/p>\n<p>Fleisch leicht abtup\u00adfen und in einen gro\u00ad\u00dfen Br\u00e4\u00adter legen. Das Oli\u00adven\u00ad\u00f6l stark erhit\u00adzen und das Fleisch damit \u00fcber\u00adgie\u00ad\u00dfen. Die Lamm\u00adkeu\u00adle in die\u00adser Mari\u00adna\u00adde 1-2 Stun\u00adden zie\u00adhen las\u00adsen, zwi\u00adschen\u00addurch wen\u00adden. Fond dazu\u00adge\u00adben. Mit Deckel im vor\u00adge\u00adheiz\u00adten Back\u00adofen bei 100&nbsp;Grad, Umluft 80&nbsp;Grad, Gas Stu\u00adfe 1 etwa 1 Stun\u00adde 45 Minu\u00adten sanft garen. Kar\u00adtof\u00adfeln sch\u00e4\u00adlen, grob w\u00fcr\u00adfeln und in den Br\u00e4\u00adter geben. Ohne Deckel bei 180&nbsp;Grad, Umluft 160, Gas Stu\u00adfe 3 noch 1 wei\u00adte\u00adre Stun\u00adde bra\u00adten. Kar\u00adtof\u00adfeln und Lamm\u00adkeu\u00adle her\u00adaus\u00adneh\u00admen und im aus\u00adge\u00adschal\u00adte\u00adten Back\u00adofen warm stellen.<\/p>\n<p>Brat\u00adfond bei star\u00adker Hit\u00adze 5 Minu\u00adten ein\u00adko\u00adchen las\u00adsen. Topf von der Herd\u00adplat\u00adte neh\u00admen. Eier, rest\u00adli\u00adchen Zitro\u00adnen\u00adsaft und Spei\u00adse\u00adst\u00e4r\u00adke ver\u00adquir\u00adlen. Zum Bra\u00adten\u00adfond geben und 3 Minu\u00adten bei klei\u00adner Hit\u00adze erw\u00e4r\u00admen, bis die Sau\u00adce dick\u00adlich wird, nicht kochen! Sau\u00adce mit Salz und Pfef\u00adfer abschmecken. Die Kr\u00e4u\u00adter absp\u00fc\u00adlen, trocken sch\u00fct\u00adteln und fein hacken. Keu\u00adle quer zur Faser in Schei\u00adben schnei\u00adden, mit den Kr\u00e4u\u00adtern bestreu\u00aden, eine Spur kal\u00adtes Oli\u00adven\u00ad\u00f6l und Zitro\u00adne dar\u00ad\u00fcber tr\u00e4u\u00adfeln.
